Blackened Fish
Melt 1 stick of unsalted butter in saucepan.  Add 2 Tablespoons CAJUN COOKING mix, 1 Tablespoon each of dried thyme and basil and 1 teaspoon black pepper.  Cook for 5 minutes.  Dip 4 fillets of fish such as salmon, tuna, swordfish or red snapper into the mixture.  Sear in heated pan for 1-2 minutes on each side.  Garnish with lemon wedges. Serves 4.
